Pork Chops in the Pressure Cooker

Busy weeknights call for fast dinners, but that doesn't mean they need to be anything but delicious! That's why I love pork chops. They're hearty, easy to cook, easily affordable, and there are so many great ways to prepare them in no time!

And after trying them cooked in all different ways, I'm here to say that trying pork chops in a pressure cooker is a must. They're so tender and delicious, with the gravy built in and a perfect sear to give them that amazing golden crust.

Plus, they're so easy! Give them a good sear, set the pressure cooker to cook, and you're all done. With less than 30 minutes from start to finish, you can get them started, whip up a fast side, and presto: dinner is served!

Pork Chops Pressure Cooker Ingredients

  • Boneless Pork Chops
  • Butter
  • Chicken broth
  • Worcestershire Sauce
  • Cornstarch
  • Water

Seasoning for Pork Chops Ingredients

  • Paprika
  • Onion powder
  • Garlic powder
  • Salt
  • Crushed red pepper
  • Black pepper
  • Brown sugar

Pork Chops in Pressure Cooker Instructions

  1. Add all the seasoning ingredients to a bowl and mix well to combine. Then pat the pork chops dry, and coat them on all sides with the seasoning mixture.

  2. Set the Instant Pot to Saute mode, and wait for it to heat up. Once nice and hot, add in the butter to melt it, then add the pork chops to brown on all sides, approximately 2 minutes per side.

  3. Remove the pork chops from the pot with tongs, and set them on a plate to rest. Cancel the Saute mode.

  4. Pour the chicken broth into the cooling pot, and stir well with a wooden spoon, making sure to scrape up all the browned bits from the bottom of the pot.

  5. Add in the Worcestershire and stir again.

  6. Return the pork chops to the pot, then secure the lid. Set it to pressure cook for 7 minutes, then allow the pressure to release naturally, about 10 minutes. After that, quick release the pressure.

  7. Remove the pork chops to a serving plate to rest again, and in the meantime, mix the cornstarch and water to make a slurry. Pour it into the gravy in the pressure cooker pot, and mix well. Let rest 5 minutes to thicken.

  8. Serve the pork chops with gravy, and enjoy!

Pressure Cooker Pork Chops Tips

  • You can make this recipe with bone-in or frozen pork chops as well! For bone-in, cook them as normal, but add 2 minutes to the pressure cooking time. See frozen instructions below.
  • Remember to sear the pork chops in butter! This will add so much flavor. The meat will stay juicier and the browned bits at the bottom of the pan will make a decadent gravy!
  • While I think the seasoning in this recipe is perfect for making the gravy extra flavorful, feel free to try some other rubs, too! I love my classic Pork Rub for all cuts of pork.

Instant Pot Frozen Pork Chops

You can prepare frozen pork chops in the pressure cooker, too. For frozen, skip searing as frozen meat will not sear, then cook an additional 2 minutes in the pressure cooker. You can reverse sear them by searing them after they're done cooking.

Pressure Cooker Pork Chops FAQs

How long do you cook pork chops in a pressure cooker?

The pork chops in a pressure cooker time depends on whether you're cooking bone-in or boneless pork chops, and if they start from frozen. For boneless pork chops, it's a 7 minute cook time at High pressure with a 10 minute release time. For bone-in pork chops in the pressure cooker, you'll want to add 2 minutes of cook time. For frozen, skip searing at the start and cook them as normal with an extra 2 minutes of cook time.

Why are my pressure cooker pork chops tough?

Pork can get tough when it's not cooked with enough liquid, gets overcooked, or is allowed to dry out while cooking. To prevent tough pork chops, make sure not to overcook them, and always sear them before cooking to lock in that precious moisture! This recipe is foolproof as the pork cooks in liquid to keep it moist.

Can you overcook pork chops in the Instant Pot?

As a source of increasing heat, you can definitely overcook pork chops in a pressure cooker if they're left in for too long or are seared too thoroughly. Boneless pork chops only take 7 minutes in a pressure cooker, plus pressure release time.

  • 6qt. Instant Pot

Ingredients
  

  • 4 Boneless pork chops
  • 4 Tablespoons Butter
  • 1 cup Chicken broth
  • 1 Tablespoon Worcestershire sauce
  • 1 Tablespoon Cornstarch
  • 2 Tablespoons Water

Pork Chop Seasoning Rub

  • 3 Tablespoons Paprika
  • 2 Tablespoons Onion powder
  • 2 Tablespoons Garlic powder
  • 3 Tablespoons Sea salt
  • 2 Tablespoons Crushed red pepper
  • 1 Tablespoon Black pepper
  • ¼ cup Brown sugar

Instructions
 

  • Add all the seasoning ingredients to a bowl and mix well to combine. Then pat the pork chops dry, and coat them on all sides with the seasoning mixture.
