Sous Vide Pork Chop Recipe

If you know me, you know I love cooking pork chops. They're delicious, easy, and pair with everything, and are one of the easiest cuts to find for low prices. That means I've had years to experiment with all sorts of recipes!

So when I say you must try this recipe, I mean it! Pork chops sous vide are the the juiciest, most tender pork chops I've ever made. They cook perfectly with barely any hands-on cooking!

And you can't go wrong with the flavors! Rosemary garlic seasoning starts this bacon-wrapped pork chops recipe off with amazing aromatic flavor, and a quick sear after the pork is cooked give it an amazing crispy finish.

Bacon Wrapped Pork Chops Ingredients

  • Pork chops (Boneless or bone-in)
  • Rosemary Salt Seasoning
  • Butter
  • Fresh rosemary (optional)
  • Bacon (optional)

Rosemary Salt Seasoning Ingredients

  • Rosemary
  • Garlic powder
  • Sea salt
  • Black pepper

How to Sous Vide Pork Chops

  1. Mix all of the rosemary salt seasoning ingredients in a small bowl. Wrap the pork chops in 2 strips of bacon each, with a rosemary sprig tucked under the bacon. Then sprinkle liberally with rosemary seasoning on all sides, patting it down so it sticks.

  2. Transfer the pork chops into a ziplock bag or vacuum-sealing bag and press the air out entirely.

  3. Fill a large bowl or pan with water, then add the sous vide machine and set the temperature to 140°F. Clip the pork chop bag to the inside of the bowl, making sure the meat is entirely submerged, then cook for 1 hour.

  4. Once fully cooked, remove the bag from the water. Heat a skillet over medium heat and melt butter in it, then add in the pork chops and sear on all sides until golden brown, spooning butter on top as they sear.

  5. Remove from the pan, let rest for 5 minutes, and serve!

Boneless Sous Vide Pork Chops Tips

  • The sous vide pork chops temp is critical to perfectly cooked pork chops! Overcooking is practically impossible with the right temperature, so you don't need to worry about how long to sous vide pork chops. Just make sure the temperature is set to 140°F!
  • I love my rosemary garlic seasoning on pork chops, but you can try anything! There's no going wrong with a classic Pork Rub with all its sweet and savory flavor! Or, try some of the amazing pork marinades listed below.
  • When you're searing the meat at the very end, make sure to get the pan nice and hot first. This will limit the amount of time the pork is sitting on the pan while it waits to heat, preventing it from over-cooking. Remember, you just want to sear the surface!
  • Make sure you're using sea salt for the seasoning! It sounds like one of those things that doesn't matter, but table salt doesn't bind well to meat and takes on a metallic flavor when cooked. Swapping to a larger-crystal non-iodine salt is a great way to boost your cooking skills easily!

You can make this recipe using bone-in pork chops without editing the recipe in any way, too! Use whichever you prefer - boneless or bone-in pork chops.

How long do you sous vide pork chops?

Boneless pork chops should be sous vide for 1 hour if starting thawed. If you're working with frozen pork chops, increase the time to 1 hour and 30 minutes. Sous vide pork chops bone-in work exactly the same way and can be used too!

What temperature should I sous vide pork chops?

Pork needs to be cooked at 140°F so it can come perfectly up to temperature without overcooking. This way, the pork will be juicy and tender with no risk of ever getting tough. When in doubt, refer to my handy Pork Temperature Chart!

Is it worth it to sous vide pork chops?

If you have a sous vide machine, I highly recommend cooking pork chops sous vide. Sous vide pork chops come out so tender and juicy and the best part is, there's absolutely no risk of overcooking them! They'll be perfect every single time.

  • 4 Boneless pork chops bone-in works too
  • 5 Tablespoons Butter
  • 4 sprigs Fresh rosemary optional
  • 4 slices Bacon optional

  • 2 teaspoons Garlic powder
  • 4 teaspoons Sea salt
  • ¼ teaspoon Black pepper

Instructions
